Ingredients to make Luka Chuppi Ice cream

  • Shell Covering ( Bread Halva ) Ingredients: 8-10 Brown Bread Slices
  • 1/4 cup Powdered Sugar
  • 1/4 tsp Cardamom Powder
  • 1/2 cup Milk
  • 3 tbsp Mixed Nuts
  • Oil for frying
  • 1-2 scoops Homemade Vanilla Ice cream (recipe in the steps)
  • Ice cream ingredients:
  • 1 cup Fresh Cream
  • 1/4 cup Sugar
  • 1 tsp Cornflour
  • 1/2 cup Full Fat Milk
  • 11/2 tsp Vanilla Essence

How to make Luka Chuppi Ice cream

  1. Homemade vanilla ice cream:
  2. In a pan whisk together corn flour, vanilla essence, sugar and milk until the sugar dissolves.
  3. Put a pan on medium flame, pour in the mixture and keep stirring continuously until the mixture thickens. Don't over cook. Strain it through a strainer to remove lumps if any. Cool it at the counter and then refrigerate.
  4. After an hour remove it and beat it with an electric beater.
  5. Whip the cream and add to the cornflour mixture. Mix nicely so that everything is incorporated well..
  6. Now freeze this mixture for around 6 to 8 hours.
  7. Scoop and serve it hidden inside the bread halva shell.
  8. Steps for the bread halva which is going to be our ice cream cover (shell aka luka chupi).
  9. Deep fry the bread slices but take care not to over brown them.
  10. Take them out on an absorbent sheet and let them cool.
  11. In a blender add the bread slices with little milk, blend it to a coarse mixture.
  12. Transfer the bread mixture in a pan without any ghee or oil. Stir continuously, add the remaining milk and stir on medium flame till the milk is completely absorbed.
  13. Add sugar mix well, now add cardamom powder. Once the mixture leaves the sides add the nuts and switch off the flame.
  14. Bread Halva or our shell for the ice cream is ready.
  15. To assemble the luka Chuppi Ice cream, take a round bowl and grease it with some ghee.
  16. Thickly line the bowl with bread halva so that it takes the shape of the bowl when we demold.
  17. take a scoop of the chilled home-made vanilla ice cream and fill it in the center of your halva bowl then quickly cover the top of the ice cream with your halva with a serving plate and demold it upside down. Serve immediately.
  18. Dig in through the shell to discover the hidden ice cream Luka chuppi ice cream. Enjoy the surprise.
