Ingredients to make Kolhapuri Egg Curry , Pictorial Recipe

  • egg 4
  • onion 1
  • garlic Pods 4
  • ginger 1 inch
  • coconut 2 tbsp
  • Green cardamom 2_3
  • cloves 2
  • Black pepper whole 4_5
  • red chilli 2
  • poppy seeds 1 tbsp
  • salt as per taste
  • oil as required
  • water
  • sugar a pinch
  • Garam masala powder 1/2 tsp
  • Chopped coriander leaves 2 tsp
  • turmeric powder 1/4 tsp

How to make Kolhapuri Egg Curry , Pictorial Recipe

  1. Boil eggs , in pressure cooker for 1 whistle with salt
  2. Remove the outer cover , cut in halves , marinate with salt and turmeric powder
  3. Fry them lightly , until light golden
  4. They look like this
  5. Now prepare for the gravy
  6. chop onions , garlic and ginger , tomato
  7. Heat 2_3 tsp oil in a nonstick pan , add whole red chilli , cloves , cardamom , black pepper
  8. Saute for 2_3 mins
  9. Add onion , garlic and ginger
  10. Saute until they are soft and translucent
  11. Add turmeric powder
  12. Add poppy seeds
  13. Add chilli powder
  14. Add garam masala powder , saute
  15. Add coconut
  16. Add tomatoes
  17. Saute and cook until tomatoes are soft
  18. Keep aside , until it's cooled down
  19. Make paste with little water
  20. Now heat oil again , add ground paste , saute until oil separates from the masala mixture
  21. Add water 1 cup add salt
  22. When gravy turns thick add fried eggs
  23. Garnish with chopped coriander leaves
  24. Serve hot with rice , paratha

My Tip:

For perfectly boiled eggs let the eggs come in room temperature , then boil in water with salt
