Ingredients to make mutton do pyaza

  • Mutton 1 kg
  • onion 750 grams
  • Ginger Garlic paste 2 tbsp
  • green chillies slit 6-8
  • whole kashmiri red chillies 8-10
  • whole red chillies 8
  • salt as per taste
  • Coriander powder 2 tbsp
  • Garam masala powder 1 tsp
  • Oil 6 tbsp
  • whole gram masala to be tied in a potli ( muslin cloth)
  • 1) green elaichi 4
  • 2) black elaichi 2
  • 3) black pepper corns 9-10
  • 4) shahi zeera 1 tsp
  • 5) laung 6-7
  • 6) javitri few
  • 7) cinnamon. stick 1 inch
  • 8) bay leaves 3
  • 9) star anise 1 star
  • 10) zeera 1 tsp

How to make mutton do pyaza

  1. clean and wash the mutton pieces
  2. heat oil in a large kadhai add the washed mutton and give it a nice mix
  3. now add the sliced onions, whole red chillies , green chillies , ginger garlic paste , corianser powder , garam masala powder , salt
  4. do not mix it and cook coveredfor about 10 minutes
  5. lower the flame at this stage
  6. after 10 mintes mix it very nicely and add the whole garam masala potli
  7. cook covered for another 10 minutes . chech if the mutton is cooked
  8. if not cook covered for another 5-7 minutes , it should be done by this time
  9. now increase the flame to high and stir and cook until you get a nice aroma and you must not find onions still intact
  10. it should be nicely cooked and mixed with the masalas
  11. garnish coriander leaves and discard the potli before serving
My Tip: Do not cook in pressure cooker for better taste
