ABOUT Sandesh stuffed onion rasmalai RECIPE

This new innovation of mine is inspired from my Onion kheer. We know how to remove the smelliness from the onions and so I thiught why not try stuffing the petals. It worked as a wonder. Tastes like heaven. Hope you like this dish.

Ingredients Serving: 10

  1. Half onion - 10 nos
  2. Sugar - 1/4 cup
  3. Cardamom powder - 1/4 tsp
  4. Quick lime ( chuna ) - 1/4 tsp
  5. For stuffing
  6. Grated paneer -1 cup
  7. Milk powder - 1/4 cup
  8. Sugar - 1/2 cup
  9. Cardamom powder - 1/2 tsp
  10. Kewra essence - few drops
  11. For rasmalai
  12. Full fat milk - 1/2 litter
  13. Sugar - 1/2 cup
  14. Kesar - 1/2 tsp
  15. Cardamom powder - 1/2 tsp
  16. Chopped pistachios - 1 1/2 tbsp

Instructions

  1. Cut the onion in half and separate the big petals one by one. And soak them in quick lime (chuna) for 8 hours.
  2. After 8 hours, wash these throuroughy under running water.
  3. Boil these in ample water for around 10 mins.
  4. Wash these again in cold water and keep it aside.
  5. Take 1/4 cup of sugar and boil it in 1/4 cup of water, till it's dissolved. Add cardamom powder and the boiled onion petals, boil these for 5 more mins.
  6. Making of stuffing:
  7. Take the paneer, sugar, milk powder and cardamom powder, mix these thoroughly. Smash the mixture further with the heel of your palm.
  8. Cook this mixture on the gas, till it becomes a tight dough. Add kewra essence. Keep this aside.
  9. Now, take 1/2 litre milk and reduce it till it becomes half. Add kesar, cardamom powder and sugar. Boil this for another 5 mins. Keep it aside.
  10. Assemble the sweets:
  11. Take the onion petals and put the paneer stuffing inside the petal and close it. Do this to all the petals one by one.
  12. Take a serving dish and place all the petals. Now, pour the rasmalai over these onion petals and keep it to cool.
  13. Spread the chopped pistachios on top for garnishing.
