ABOUT DOODH NA PUFFS/MILK PUFFS RECIPE

This is a typical parsee recipe. Its a special winter delicacy which in olden days was made specially in winters on terraces since in those days not every house had refrigerators. But now since you find refrigerators in every house this can be made in any season.

Ingredients Serving: 8

  1. ...whole pasteurised milk 1 ltre
  2. ...Sugar 6-7 tspns (or as per your requirement of sweetness)
  3. ...Cardamom powder (to sprinkle)
  4. ..Nutmeg powder (to sprinkle)

Instructions

  1. 1...Heat the milk til it comes to a single boil.
  2. 2...Add sugar and stir till it dissolve in the milk. Remove from the stove and allow to cool.
  3. 3...Let the milk cool down, also stirring it intermittantly, ensuring you do not allow the layer of cream to form on top.
  4. 4...Once the milk cools down, refrigerate it overnight or 8-9 hours to chill.
  5. 5...Next day morning take small amount of milk (a cup full) in a container and churn it with electric blender or a whipping machine to allow a nice thick froth to form.
  6. 6... As the froth starts forming keep collecting it with a ladle and fill it up in the glasses till the full brim as shown in the picture.
  7. 7... Once it reaches full brim Sprinkle a pinch of cardamom and nutmeg powder on the top of the froth and serve.
