Ingredients to make French Yogurt Cake

  • For the cake:
  • ½ cup plain yogurt
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 ½ cup unbleached all-purpose flour
  • 2 tsp. baking powder
  • 2 tsp. grated lemon zest
  • ½ cup canola oil
  • For the glaze:
  • 1 cup icing sugar
  • 2 tablespoons lemon juice

How to make French Yogurt Cake

  1. Preheat the oven to 350 degrees Fahrenheit / 175 degrees Celcius.
  2. In a large bowl, combine the yogurt, sugar, eggs and oil stirring until well blended. Add the almond powder, flour, baking powder, and zest, mixing to just combined.
  3. Do not over mix. Pour the batter into a buttered and lined 9-inch round cake pan.
  4. Bake for 30-35 minutes, until the cake feels springy to the touch and a toothpick or cake tester inserted into the center comes out clean.
  5. Meanwhile, prepare the lemon glaze. Mix the icing sugar with the lemon juice. Adjust the lemon juice to get the correct consistency.
  6. Cool cake on a rack. Pour the glaze on the cake once cooled. Serve.
