Beiruti Hummus

Ingredients to make Beiruti Hummus

  • chickpeas – 2 cups soaked overnight
  • Tahini paste – 6 tbsps
  • garlic cloves – 8 to 10
  • parsley – 1 tbsp
  • green chillies – 1 tsp chopped
  • cumin Powder – 1tsp
  • salt – to taste
  • Juice from 1 lemon
  • olive Oil – 1/2 cup

How to make Beiruti Hummus

  1. Wash and soak chickpeas in enough water for 8 hours or overnight. Following day drain the water and add fresh water enough to pressure cook and cook until soft.
  2. Drain and set aside. Whizz green chilies, garlic cloves and parsley in a blender or food processor.
  3. Add in chickpeas with 2 tbsp. of olive oil. Grind to smooth paste. Now add tahini paste, salt, cumin powder and lemon juice.
  4. Grind again and make fine paste. Refrigerate till serve.

My Tip:

Use canned chickpeas if in hurry!
