Ridged Gourd is comes from Gourd family contains Cucurbitacin B, E and oleanolic acid.

Ingredients Serving: 4

  1. Turiya or Ridge gourd 250 gm
  2. Patara 6 to 8 big pieces
  3. Oil 2 tbs
  4. Cumin seeds 1/2 tsp
  5. Mustard seeds 1/2 tsp
  6. Asafodita 1/2 tsp
  7. Turmeric 1tsp
  8. Red chilli powder 1 tsp
  9. Chilli ginger paste 1 tsp
  10. Dhanya jeera powder 2 tsp
  11. Aamchur powder 1/2 tsp
  12. Sugar 1 tsp
  13. Salt

Instructions

  1. Cut the vains of turiya and remove the skin.
  2. Heat the oil in kadhai for tadaka add cumin and mustard seeds.
  3. When the seeds crackle, add the Asafodita and chill ginger paste.
  4. Add chopped turiya or Ridge gourd, turmeric powder salt and mix well.
  5. Add 1 cup of water and cover the kadhai and cook on medium flame for 5 minutes.
  6. After 5 minutes add red chilli powder, Dhanya jeera powder, Aamchur powder, sugar again cover the kadhai cook for 5 minutes till the ridge gourd becomes soft.
  7. Chopped cooked Paatra in small pieces.
  8. Add the Paatra toss gently and simmer for 2 minutes stir in between softly.
  9. Serve hot hot Turiya Paatra nu Shaan with roti or paratha.
