Baked Penne in Red and White sauce

Ingredients to make Baked Penne in Red and White sauce

  • 700 gm Penne Pasta (white or brown)
  • 1 large Onion
  • 5 medium Tomatoes
  • 8 cloves of Garlic
  • 1 inch Ginger
  • 2 medium Green Bell Peppers
  • 2 Green Chilies
  • 1 tsp Pepper
  • 1 tsp Oregano
  • 1 tbsp Pasta sauce (optional)
  • 1 tbsp Olive oil
  • 1 tbsp Breadcrumbs
  • 1 cup Milk
  • For white sauce:
  • 1 tbsp All Purpose Flour
  • 1/2 cup Grated Mozzarella
  • 1/2 cup Boiling Water
  • A pinch of Salt and pepper

How to make Baked Penne in Red and White sauce

  1. Boil the pasta with salt and 1 teaspoon oil. Keep aside.
  2. Finely chop the onion, bell pepper and tomato. In a non stick wok, heat olive oil and saute the onions till pink and translucent.
  3. Turn the heat low, mince the ginger and garlic and add it to onions. Also add chopped bell pepper.
  4. Cook for 4-5 to minutes till the bell pepper is soft. Now add tomatoes, salt, green chilies.
  5. Cook tomatoes until soft. Add a cup of water and simmer till thick sauce is formed. Mix the pasta in the sauce and mix well. Add the additional pasta sauce. Cook for 2 minutes.
  6. Turn off the heat and preheat the oven for 10 minutes at 180 degree Centigrade.
  7. For white sauce: Mix the flour in cold milk until completely dissolved. Bring it to a boil on low heat. Stir continuously, to avoid any lumps.
  8. Once a thick consistency is formed turn off the heat. Add cheese, boiling water, pepper and salt.
  9. Put the cooked pasta in red sauce in an oven proof dish and pour white sauce over it. Spread bread crumbs on top with white sauce and cover it evenly.
  10. Bake for 10-12 minutes until the breadcrumbs are nice and crisp. Serve immediately.
