Quiche Lorraine

Ingredients to make Quiche Lorraine

  • For the pastry-
  • 200gms All purpose Flour
  • 100gms Butter, chilled
  • 1/4 tsp Salt
  • 3 tbsp Chilled Water
  • For the filling-
  • 4 Eggs
  • 1/4 cup Grated Cheese
  • 1 cup milk
  • 3/4 Cup Bacon/Ham(crisply cooked and chopped)
  • 2 tsp Flour
  • Salt and black pepper to taste
  • Handful of chopped chives

How to make Quiche Lorraine

  1. For the crust- Dice the chilled butter and add the flour and salt.
  2. With your hand rub in the butter till the mixture resembles coarse breadcrumbs.
  3. Sprinkle the chilled water and slowly bring the dough together using a light hand.
  4. Just pat dough together, do not overwork it. Wrap in cling film and chill for an hour.
  5. After an hour take out dough and roll out into a circle of approx 1/2 cm thickness.
  6. Butter a tart mould and lay out the dough on top, do not stretch. Cut off excess. Remember that pastry will shrink a bit.
  7. Pre heat oven to 200 deg C.
  8. Poke holes into the dough with a fork and keep aside.
  9. Make the filling- Combine the Milk, eggs, flour, bacon/ham, salt and pepper as well as the chives in a large bowl and give it a good whisk.
  10. Pour out into the prepared tart shell.
  11. Top with the cheese and bake for 30-40 mins till crust is golden.
