Ingredients Serving: 4

  1. 1/2 cup carrot cubes
  2. 1/2 cup cauliflower medium florets
  3. 1/2 cup capsicum cubes
  4. 1/2 cup french beans cut in medium size
  5. 1/2 cup paneer cubes fried
  6. 1/2 cup frozen green peas
  7. For gravy,4-5 garlic cloves roughly crushed
  8. 1 inch ginger roughly crushed
  9. 2 tomato chopped
  10. 1/2 cup toamto puree
  11. 10-12 cashew
  12. 1 cinnamon stick
  13. 2 black and 2 green cardamom
  14. 1 onion chopped
  15. 2 bay leaves
  16. 1 and 1/4 tsp red chilli powder
  17. 1 tsp corriender powder
  18. 1/4 tsp termeric powder
  19. 1/4 tsp black pepper powder
  20. 1/4 cup khoya
  21. 2-3 tsp soya leaves
  22. 1/2 tsp all spice powder
  23. Salt to taste
  24. Oil for Cooking
  25. For tempting and garnish,large size cut grated ginger
  26. 1 tsp butter
  27. Fresh coriander chopped
  28. Lemon wedge and some extra khoya

Instructions

  1. First add oil in pan add all cut vegetables except capsicum in it and saute for 2-3 min.after 2 min add capsicum and saute again for 2 minute.Now keep aside this
  2. Now hot oil in a pan add cinnamon stick,black and green cardamom,crushed garlic,ginger, cashew and chopped tomato and saute this for 3-4 minute when done keep to cool,when cool transfer in grinding jar and make smooth paste
  3. Again hot oil in other pan add bay leaves, chopped onion when translucent add tomato puree and saute,when masala leave oil add salt and grind paste and again saute.
  4. Now add red chilli, corriender, termeric and black powder and all spice powder one by one and stir this.Add some water and cook the gravy.
  5. Now add khoya and soya leaves,fried paneer and continuosly cook for 2-3 min till smell pleasant comes and gravy properly cook.
  6. For tempting,take butter in pan add grated ginger slice when smell comes pour in prepared gravy,finally add fresh chopped coriander leaves,lemon wedge,and grate some maava over it.
  7. Now Shahi Veg Khoyawala is ready to serve,serve hot with naan and kulcha for more taste
