Spinach chapathi is very healthy and tasty too.French beans stir fry and coriander dal side dishes are perfect for spinach chapathi.

Ingredients Serving: 4

  1. Wheat flour- 4 cups
  2. Spinach - 1 bunch
  3. Curd- 1cup
  4. French beans- 250 gms
  5. Dal- 1cup
  6. Coriander- 1/2 cup
  7. Salt - to taste
  8. Chilli powder- as per our taste

Instructions

  1. For spinach chapathi- In a blender , add 1 bunch spinach, salt, garlic, cumin seeds, yogurt and blend well.
  2. In a bowl, add 4 cups wheat flour , oil and measure spinach juice ( 2 cups) and knead it into smooth dough. Cover it with a moist cloth.
  3. French beans stir fry- cut fench beans into 1/2 inch pieces and place them in microwVe bowl and add 1 cup of water, little salt and cook for 10 min.
  4. In a non stick pan, add little oil and do the seasoning and add french beans and stir fry for 5 to 7 min. Sprinkle salt, chilli powder and fresh grated coconut and toss well.
  5. For coriander dal- in a pressure cooker, add toor dal, chopped onion, coriander leaves, salt, chilli powder, turmeric powder, tamarind water and pressure cook for 3 whistles. In a small pan , add ghee and oil and do the seasoning.
  6. Add this seasoning to cooked dal and transfer it to serving bowl.
  7. Heat a non stick tawa .
  8. In the mean while, divide the spinach wheat dough into equal portions and roll into thin chapathi and cook on both sides and serve hot.
