ABOUT Gajra curry RECIPE

Gajra is a winter special Rajasthani dish . In Rajasthan carrot leaves are known as gajra. Fresh gajra is used to make curry with buttermilk , moong dal and some common spices. Tastewise it is spicy , lill sour and served with bajra roti, gud and lots of ghee.

Ingredients Serving: 5

  1. 2 cup Gajra chopped
  2. 1/4 cup Moong dal
  3. 2 cup buttermilk
  4. 1 tbsp gram flour
  5. 1tsp red chilli powder
  6. 1/4 tsp turmeric powder
  7. 1/2 tsp coriander powder
  8. Salt to taste
  9. Water for boiling gajra
  10. for Tadka :-
  11. 2 tbsp Oil
  12. 1/4 tsp cumin seeds
  13. 1/4 mustard seeds
  14. Pinch of asfoetida
  15. 3 dry red chilli
  16. 1/4 cup chopped onion
  17. 3-4 chopped garlic cloves
  18. 1/4 tsp red chilli powder

Instructions

  1. Wash and chopp gajra
  2. In a bowl add water , chopped gajra , soaked moong dal and boil it on medium flame for 2-3 minutes. After that strain it.
  3. In another bowl mix buttermilk with red chilli powder, turmeric powder, salt , coriander powder and gram flour.
  4. For curry Take a handi or wok. Pour buttermilk mixture in it and cook it on high flame. Continuesly stir it till it starts boiling.
  5. When starts boiling add boiled gajra and moong dal.
  6. Let be simmering it on low flame for 10 minutes.
  7. Prepare tempering:- In a pan heat oil on medium flame.
  8. Add cumin seeds, mustard seeds , dry red chilli. Now add chopped onion, garlic and red chilli powder .
  9. Saute it for 1 minute and add it into curry. Cook it for 2minutes.
  10. Gajra curry is now ready to serve with bajra roti , gud
