ABOUT Gajra curry RECIPE

Gajra is a winter special rajasthani dish. In Rajasthan carrot leaves known as gajra and is used to nake yummy curry with using buttermilk, gram flour and some common spices. It is served with bajra roti ,gud and lots of ghee.

Ingredients Serving: 5

  1. 2 cup Gajra chopped
  2. 1/4 cup moong dal
  3. 2 cup buttermilk
  4. 1 tbsp gram flour
  5. 1 tsp red chilli powder
  6. 1/4 tsp turmeric powder
  7. 1/2 tsp coriander powder
  8. Salt to taste
  9. Water for boiling gajra
  10. For tempering:-
  11. 2 tbsp oil
  12. 1/4 tsp cumin seeds
  13. 1/4 tsp mustard seeds
  14. Pinch of asfoetida
  15. 3 dry red chilli
  16. 1/4 cup sliced onion
  17. 3-4 chopped garlic clove
  18. 1/4 tsp red chilli powder

Instructions

  1. WASH AND CHOPP THE GAJRA.
  2. IN A DEEP STEEL CASSEROLE BOIL GAJRA, MOONG DAL WITH WATER FOR 2 MINUTES.
  3. COVER THE LID AND LET BE BOIL IT FOR 2 MINUTES.
  4. IN A BOWL MIX BUTTERMILK WITH 1 TSP RED CHILLI POWDER, 1/4 TSP TURMERIC POWDER, 1/2 TSP CORIANDER POWDER, 1 TBSP GRAM FLOUR
  5. IN A HANDI OR WOK COOK THE BUTTERMILK MIXTURE ON HIGH FLAME.CONTINUESLY STIR IT TILL IT STARTS BOILING
  6. AD BOILED GAJRA AND MOONG DAL.
  7. SIMMER IT FOR 10 MINUTES ON MEDIUM FLAME.
  8. FOR TEMPRING:- IN A PAN HEAT 2 TBSP OIL ON MEDIUM FLAME. ADD CUMIN SEEDS , MUSTARD SEEDS , SLICED ONION , DRY RED CHILLI AND CHOPPED GARLIC CLOVES .
  9. ADD ASFOETIDA , RED CHILLI POWDER AND SAUTE IT FOR 1 MINUTE.
  10. NOW MIX TARKA WITH CURRY.

Hi dear.. really appreciate your effort. Small suggestion we shouldn't boil butter milk. Just heating is fine. The reason is buttermilk has good bacteria for digestion if u boil it the bacteria will die.
