Broccoli soup

Ingredients to make Broccoli soup

  • 2 cups of broccoli florets
  • 2 cloves garlic
  • 1 green onion (green part for garnishing )
  • 2 tbsp olive oil
  • 1 cup milk (full cream) or 2 tbsp cream
  • Oregano a pinch (optional)
  • 500 ml chicken stock
  • Salt to taste

How to make Broccoli soup

  1. Chop the broccoli ,onion ,garlic. Keep aside.
  2. Heat oil in a sauce pan, add onion and garlic, saute it for 1 min and add broccoli.
  3. Saute it for 2 -3 mins, add the oregano along with the chicken stock.
  4. Cover and cook until the broccoli becomes soft.
  5. Turn off the flame and with the help of an immersion blender blitz it to a smooth puree.
  6. Then turn on the flame and pour in milk, stir well and bring it to a boil.
  7. Add salt as per taste and stir well.
  8. Serve warm with croutons or toasted bread.
My Tip: You can replace the olive oil with butter and milk with cream for a rich version of the soup . For the chicken stock mix 1 cube of chicken stock with 500 ml of hot water and stir it well. If you are using cream add it at the end after switching off the flame as cream tends
