Ingredients Serving: 4

  1. 1 kg spinach leaves
  2. 2-3 medium sized potato, diced
  3. 250 gm cauliflower
  4. 4 tbsp mustard oil or ghee
  5. 1 tsp cumin seeds
  6. 1 large chopped onion
  7. 1 tbsp ginger-garlic paste
  8. 2 slit green chili
  9. 2 chopped tomatoes
  10. 1 tsp cumin powder
  11. 1 tsp coriander powder
  12. 1/2 tsp turmeric
  13. 1/2 tsp dry mango powder
  14. Salt as per taste
  15. Water 1 cup or as required
  16. 1 tsp garam masala

Instructions

  1. Blanch spinach leaves with little salt in boiling water
  2. Drain out excess water and Allow to cool
  3. Blend spinach to form smooth puree
  4. Heat oil in pan and fry potatoes until golden brown and keep it aside
  5. In the same pan, add chopped cauliflower and cook till Gobi is tender and golden brown
  6. Take out from pan and keep it aside
  7. Add 1 tbsp oil in same pan ,splutter 1/2 tsp cumin seeds
  8. Add onion ,green chilies
  9. Saute for 2 minutes until onions are translucent
  10. Add 1 tbsp ginger -garlic paste
  11. Saute for 1-2 minute until raw aroma disappears
  12. Add tomatoes and mix well
  13. Add all the spice powders and salt. Mix well
  14. Saute till tomatoes are mushy
  15. Add fried potatoes and cauliflower
  16. Mix and stir well for 2 minutes
  17. Add spinach puree and mix well
  18. Add 1 cup water and bring to boil
  19. Add 1 tsp garam masala and mix well
  20. Cover and cook for 4-5 minutes over low heat
  21. Cook for few more minutes until gravy thickens
  22. Serve hot with chapati
