Ingredients to make Birds egg nest cutlet

  • 4 eggs
  • 4 boiled potatoes
  • 2 onions
  • 1/2 bunch coriander leaves
  • 1 cup vermicelli
  • A pinch of turmeric powder
  • A pinch of yellow food colour
  • 4 green chillies
  • 1 maggi cube
  • few curry leaves
  • oil as required to deep fry
  • 1/2 cup maida flour or cornflour
  • 1 tbsp ginger-garlic paste
  • salt to taste

How to make Birds egg nest cutlet

  1. Take a pan, heat oil and add jeera, curry leaves and green chillies.
  2. Add the onions and fry till they turn golden brown in colour. Then add the ginger-garlic paste and add a pinch of turmeric powder.
  3. Next add the red chilli powder and the maggi cube and salt to taste. Fry this for 2 minutes.
  4. Now add the mashed potatoes and mix it well and cook for 5 minutes. Keep aside.
  5. Take the boiled eggs, first cover it with the potato bhaji, then dip it in the cornflour mixture, next dip it in the vermicelli and deep fry them till they turn golden brown in colour.
  6. Garnish it as shown in the picture and serve it with green chutney and tomato ketchup.

My Tip:

Instead of full egg u can use boiled egg potato bhaji
