Some people call it Uperpendi as well. This is a popular dish in Vidarbha and Madhya pradesh. This is very healthy breakfast as it is made from wheat flour. It is a versatile as it is quite filling dish.

Ingredients Serving: 4

1 Cup wheat flour (coarse)
1/2 Cup onion finely chopped
5 tablespoons oil
4 dry red chillis
Pinch of hing
1/4 teaspoon turmeric powder
salt as per taste
1 cup buttermilk
few peanuts
Chopped coriander leaves
few curry leaves
Mustard seeds for tempering

Instructions

Heat 3 tablespoons oil in a pan.
Add wheat flour in it and roast it on medium heat till the colour changes to light pink.
Transfer the flour in a bowl.
Add remaining oil in the same pan. Add mustard seeds, hing, red chillies and curry leaves in it.
Saute it for few seconds and add peanuts and fry it for few seconds
Then add onion in it and fry for few seconds till it becomes translucent
Add roasted flour and salt and mix it well.
Then add buttermilk in it and mix vigorously and make sure that there are no lumps in it.
Cover the pan and steam it on low heat for few minutes.
Serve it hot after garnishing with chopped coriander leaves.
