Ingredients Serving: 4

  1. Carrots grated 1/2 cup
  2. Full cream milk 1/2 liter
  3. Condensed Milk 3 tbsp
  4. Crushed Cardamon 2 to 3
  5. Raisins (optional) a few
  6. Clarified butter 1 tsp

Instructions

  1. Grate the carrots and keep aside.
  2. Now take a frying pan, drop the butter/ghee and just stir fry the carrots for a while just that they are covered with the ghee. In the same pan fry the raisins and keep aside.
  3. In another deep pan, pour the milk for boiling. When hot (but not boiling), add the carrots to the milk and let them boil in the milk. Add cardamons and raisins. Put on low flame and keep it covered.
  4. Check consistency in between and if you feel the milk has reduced, you can add more milk.
  5. When done, remove from pan and add condensed milk and stir.
  6. Gajar ki kheer is ready to be served.
