Made with the peel of Ridge gourd and seasoned deliciously, it is a unique fibrous and healthy accompaniment with rice.

BEERAKAI THOKKU - ridge gourd peel masala

Ingredients to make BEERAKAI THOKKU - ridge gourd peel masala

  • Ridge gourd - 1
  • jeera - 1/2 tsp
  • urad dal - 1/2 tsp
  • green chilly - 2
  • garlic pods - 5
  • curry leaves
  • sesame seeds (nuvvulu) - 3 tsp
  • Oil, salt as needed

How to make BEERAKAI THOKKU - ridge gourd peel masala

  1. Wash the ridge gourd well and shred the ridges and peel. Make a course powder of it in mixer. Squeeze excess water. Remove any resident fibre.
  2. In a flat pan, add 4 sp of oil and make seasoning of jeera, udat dal, curry leaves, garlic, green chillies
  3. Add the Ridge gourd powder and saute for about 20 minutes. When cooked, the colour will slightly turn dark. Add sesame seeds and cook for 5 minutes till it just crackles.
  4. Serve with rice.

My Tip:

It can be refrigerated and kept for few days if prepared in large quantity with more oil. If prepared with only one ridge gourd, it needs to be intensely peeled to get a good volume of peel. The left over gourd can be put in dal.
