Ingredients to make Soya Curry

  • onion 1
  • tomato 1
  • cashews 1 tbsp
  • oil 2 tbsp
  • curd 1/2 cup
  • cumin seeds 1/2 tesp
  • star anise 1
  • bay leaf 1
  • cinnamon stick 1
  • ginger green chilies paste 1 tesp
  • Garam masala 1/2 tesp
  • coriander powder 3/4 tesp
  • red chilli powder 1/2 tesp
  • salt 3/4 tesp
  • turmeric powder 1/2 tesp
  • Kasoori methi 1 tesp
  • Fresh cream 2 tesp

How to make Soya Curry

  1. SOAK 1 CUP SOYA CHUNKS IN 2 CUPS BOILING WATER FOR 30 MINS
  2. DRAIN & RINSE WITH FRESH WATER
  3. SQUEEZE TIGHTLY & KEEP ASIDE
  4. HEAT 1 TBSP OIL, SAUTE 1 SLICED ONION TILL TRANSLUCENT
  5. ADD 1 TBSP CASHEWS
  6. ADD 1 CHOPPED TOMATO, COOK TILL SOFT
  7. TAKE OFF HEAT, ALLOW IT TO COOL
  8. ADD TO A GRINDER, ADD 1/2 CUP THICK CURD
  9. GRIND TO A FINE PASTE
  10. HEAT 1 TBSP OIL, ADD 1/2 TSP CUMIN SEEDS, 1 BAY LEAF, 1 STAR ANISE & 1 CINNAMON STICK
  11. ADD GROUND MASALA PASTE, SAUTE ON LOW HEAT
  12. AS MASALA STARTS LEAVING THE SIDES, ADD 1 TSP GREEN CHILLI-GINGER PASTE, SAUTE
  13. ADD 1/2 TSP GARAM MASALA, 3/4 TSP CORIANDER POWDER, 1/2 TSP RED CHILLI POWDER
  14. ADD 3/4 TSP SALT, 1/2 TSP TURMERIC POWDER
  15. ADD 1 GLASS OF WATER, MIX
  16. BRING TO A BOIL, ADD THE SQUEEZED SOYA CHUNKS, COVER & COOK FOR 5 MINS ON LOW HEAT
  17. ADD 1 TSP KASOORI METHI, 2 TSP FRESH CREAM, COOK FOR A FEW SECONDS
