Ingredients to make Paya (trotters)

  • 1 kg cleaned paya
  • 3 tbsp ginger-garlic paste
  • 3 tbsp red chilli paste
  • 1/4th cup chopped coriander leaves
  • 1 tsp garam masala powder
  • 1/2 tsp turmeric powder
  • 1 tsp dhania powder
  • 2 sliced onions
  • 2 tomatoes
  • 1 lemon
  • 2 tbsp ghee
  • 2 cloves
  • 1 small Cinnamon

How to make Paya (trotters)

  1. In a pressure cooker, add the paya, sliced onion, ginger-garlic paste, salt as per taste, 1 cup of water and cook till the paya becomes tender.
  2. In a vessel add oil to heat, then add cinnamon, clove. Next, add sliced onions and saute until they turn golden. Add the tomatoes and cook.
  3. Make a paste by mixing chilli powder, coriander powder, turmeric and remaining ginger-garlic paste using a little water.
  4. Add the masala into the vessel and saute for 5 mins. Add in the cooked paya and add water to dilute.
  5. Add salt as per taste and pepper powder, garam masala powder, chopped coriander leaves, lemon. .
  6. Cook this for 5 mins and serve.
