Chicken Achari

Ingredients to make Chicken Achari

  • Chicken – 750 gms
  • Onions – 3 medium
  • FreshTomatoes – 4 medium
  • (remove the skin and puree them)
  • Garlic ginger paste – 2 ½ tsp
  • Turmeric – 3/4th tsp
  • Red Chili powder – 2 tsp (pref Kashmiri)
  • Salt – to taste
  • Fennel seeds – 1 tsp full
  • Kalonji – 1 tsp full
  • Mustard seeds – 1 tsp full
  • Fenugreek seeds – 1/8th tsp/8-10 seeds
  • whole Green chilies – 5 to 7
  • Chat masala – 2 tsbp
  • Lemon juice – 2 lemons
  • (enough to mix with chat masala)
  • Yogurt – 3/4th cup
  • Oil – 1/2 cup

How to make Chicken Achari

  1. In a pan add one tsp oil, then add quartered onions and sauté for few minutes and then cool it and make it into a coarse paste.
  2. Put two slight cross slits on tomatoes and put them into boiling water.. after 5 minutes, remove from the water peel the skin and blend them into a smooth paste.
  3. Beat the curd and keep aside .
  4. In a small bowl mix chat masala and lemon juice. Put slits on the whole green chilies and stuff them with chat masala and lemon juice mixture and keep aside.
  5. Make a coarse powder of Fennel seeds, mustard seeds,fenugreek seeds and kalonji seeds.
  6. Now take a pan, on high flame add oil and then add onion paste, fry till golden brown then add garlic ginger paste after that add chicken, now fry till chicken changes color (opaque) for about 5 to 7 minutes.
  7. Now add salt, turmeric powder, red chilli powder, beaten yogurt , tomato paste, mustard seeds, fennel seeds, kalonji seeds, fenugreek seeds coarse powder and sauté till fat separates.
  8. Finally add green chilies stuffed with chat masala and leave it on dum on very low flame for 5 to 7 minutes and its done.
My Tip: If you are in a hurry or otherwise also, you can use tomato paste store bought half cup instead of fresh tomatoes. Oil is entirely on your choice, you can always make it with 1/4th cup as well.
