About Veggies Idli Recipe

A sumptuous dish! Wholesome meal with the goodness of colourful vegetables. Use fresh or left over idlis.

Veggies Idli

Ingredients to make Veggies Idli

  • Idlis 6 pieces
  • one onion
  • one tomato
  • 1 big capsicum
  • 1 carrot
  • 1/2 tsp mustard seeds
  • curry leaves - 5-6
  • coriander leaves - 1tsp
  • Red chilli powder or green chillies (optional)
  • Pinch of garam masala
  • oil 2tsp
  • salt to taste

How to make Veggies Idli

  1. Chop onion, tomato and the vegetables. Cut the Idlis into a desired shape.
  2. Take a skillet add 2 tsp oil.
  3. Now, add mustard seeds,curry leaves. Let them splutter well.
  4. Now add chopped onion, sauté for a minute and add all the chopped vegetables.
  5. Add the salt and other spices as per taste.
  6. Keep it covered for 2-3 minutes.
  7. Now add the Idli pieces and mix well. Cover and cook for 2-3 minutes on low.
  8. Granish with coriander leaves and serve hot.

My Tip:

If using left over Idlis keep the idlis in a covered box for use to avoid moisture loss. Seasoning is not to be over fried. Good wholesome and healthy lunch.
