About Veg Thukpa Recipe

Thukpa is a flat noodle soup, originated from Tibet and has also found a prominent place in Nepali cuisine. Every home will have their own special way of making a Thukpa, some even make the noodles at home. Here’s a basic recipe with the addition of healthy vegetables

Veg Thukpa

Ingredients to make Veg Thukpa

  • 500 gms chopped vegetables like carrots, beans, cabbage,sweet corn,etc
  • 150 gms noodles of your choice
  • 2 tablespoon mustard or vegetable oil
  • water as needed
  • salt to taste
  • 1 tablespoon freshly grated ginger
  • 1 tablespoon soy sauce
  • 1 tablespoon freshly crushed black pepper powder
  • 1 tablespoon white radish shredded
  • 1 tablespoon chilli sauce

How to make Veg Thukpa

  1. Heat oil in a saucepan and sauté the grated ginger for 1/2 a minute on medium heat
  2. Add the chopped vegetables and sauté for 3-5 minutes
  3. Add salt to taste, black pepper powder, soy sauce and mix well
  4. Add at least 2 cups of water and bring it to boil
  5. Reduce heat and cook covered until vegetables are half done
  6. Add the noodles and mix well and let the soup simmer covered until the noodles and veggies soften.
  7. Transfer to serving bowls and garnish with grated radish and chilli sauce
  8. Enjoy hot with buns or breads
