Ingredients Serving: 4

  1. 1/2 kg lamb meat, cleaned and cut into pieces
  2. 1/2 tsp turmeric powder
  3. Salt to taste
  4. Chilly powder 1tbs, green chilly 3
  5. Pepper powder - 1tsp
  6. Garam masala -1tbs Coriander powder 1 1/2 tbs
  7. 1 tbs ginger garlic paste
  8. For the curry, 3 tblsp cooking oil
  9. 2 bay leaves
  10. 4 whole green cardamoms
  11. 200 g gongura leaves ( red sorrel)
  12. 1 large onion finely chopped
  13. 1 stem large curry leaves
  14. 1/2 tsp turmeric powder
  15. Salt to taste
  16. Chilly powder 1tbs
  17. Green chillys -2
  18. Pepper powder - 1tsp
  19. Garam masala -1tbs
  20. Coriander powder 1 1/2 tbs
  21. 1 tbs ginger garlic paste
  22. 1 large cinnamon stick,
  23. 4 cloves (laung)
  24. Chopped coriander 1 tbs for garnishing

Instructions

  1. Boil the mutton with some salt n turmeric in a pressure cooker. * Take a separate pan add half a glass of water n add the washed gongura leaves into it n blanch it ( takes about 5 mnts ) * Once it cools blend it to a purée
  2. * Once it comes to room temperature blend it to a purée with d green chillys * Now in a pan heat oil and add all the whole spices.( cloves cardamom bay leaves n cinnamon )
  3. * Once they start spluttering, add the chopped onion ... cook it til it turns pink n translucent .. Nxt add ginger garlic paste * Sauté till its no more raw ... and then add the gongura paste to it and all the ground spices and salt
  4. * Sauté till the oil is separated from the mixture. * Now add the meat pieces and sauté for five minutes so that they get well wrapped with the spices paste.
  5. * Then add water for curry and boil till it thickens * Garnish with fresh coriander or mint leaves and serve with rice.
