Brown Rice and Red Bean Soup

Ingredients to make Brown Rice and Red Bean Soup

  • 2 cups of Red beans (soaked overnight)
  • 1 cup Bell pepper (chopped)
  • 1/2 cup Brown basmati rice
  • 3/4 cup Carrots (chopped)
  • 11/2 cups onion (chopped)
  • 3 tbsp Tomato paste
  • 2 tbsp Jalapeno (chopped)
  • 2 tbsp Garlic (minced)
  • 1 tbsp Olive oil
  • 11/2 tsp Cumin powder
  • 1 tsp Cumin seeds
  • 1/2 tsp Chilly powder
  • 1/2 tsp Thyme
  • 1/2 tsp Oregano
  • Cilantro to garnish
  • Pepper to taste
  • Salt to taste

How to make Brown Rice and Red Bean Soup

  1. Soak the red beans overnight and cook them before preparing the dish in a pressure cooker.
  2. Take a cooking bowl and boil 3 to 4 cups of water in it, add in the brown rice and let it simmer until it is cooked.
  3. Take a pan and heat the oil, add in the cumin seeds and garlic. Saute this for a few seconds.
  4. Next put in all the vegetables and cook, when they are cooked add in all the beans except for 1 cup. Keep the 1 cup beans aside.
  5. Add in 4 and 1/2 cup of water and the other ingredients, bring this to a boil. Once it is boiled, coarsely mash this mixture with the help of a ladle or immersion blender. Next put in the kept aside 1 cup of beans.
  6. Let this simmer for 15 mins or so then turn off the heat.
  7. Serve this dish hot with a garnish of cilantro.

Lovely dish :D so we need not mash the red beans? or can we mash it a little so that it blends well with the veggies?
