Spaghetti with meatballs

Ingredients to make Spaghetti with meatballs

  • 250gm spaghetti
  • 250gm mince chicken
  • 1/2kg ripe tomatoes
  • 1 onion
  • 3-4 pods garlic
  • 1 small carrot
  • 1 long brinjal
  • 1/2 green capsicum
  • Handful of green olives.

How to make Spaghetti with meatballs

  1. Take a cooking bowl and boil the spaghetti in salt water. Once cooked strain the pasta and rinse in cold water.
  2. Remember to reserve 1/2 cup of the salted water in which the spaghetti was boiled. Keep this aside.
  3. Heat 1 tablespoon olive oil in a pan, add in the finely chopped onion. Stir and cook till they become transparent. Next add in the crushed garlic and 100 gm of mince chicken and stir this mixture well.
  4. Once the meat changes colour, put in the chopped tomatoes, then add a little water, let this simmer and cook on low heat.
  5. After 1 minute, put in the vegetables, carrot, brinjal and capsicum. Also add in the ingredients, olives, and salt and some cayenne pepper, as per your taste.
  6. Let this sauce thicken and cook, add some of the salted water once the water dries up. Note that the sauce should be of a coating consistency.
  7. In the remaining minced meat, add 1 chopped onion, 1 tablespoon ginger-garlic paste, salt, pepper and a little cayenne pepper. Also add in 1 egg and 2 tablespoon of cornflower. Combine and mix these ingredients thoroughly.
  8. Take a pan and add oil to heat. Make small balls of the minced mixture and fry in the pan till it turns golden brown in colour. Store this aside.
  9. To assemble the dish, heat the spaghetti in a deep dish. Next place the meatballs on top of the spaghetti and cover with the hot sauce.
  10. Serve hot immediately.

My Tip:

Note that adding the spaghetti water to the sauce, helps to thicken the sauce faster. Also, I have used whole wheat pasta to prepare this dish.

Nice recipe :D I guess we can skip the addition of veggies and just make it with the chicken instead?
