Who says soups are only great in the winters? This summer, try your hand at some delicious chilled soups that are healthy and refreshing and make for an interesting meal all on their own.
Packed with flavours that are designed to cool your down instantly, all you need to do is get your hands on some summer produce and start mixing up a batch of your version of the cold soup. We’ve listed out 5 of our favourite recipes that are bound to bring the temperature down.
Chinchecha Saar (Maharashtrian style cold tamarind soup): Deliciously tangy because of freshly harvested tamarind, this cold soup is refreshing and works as a digestive. Two for the price of one! The best part is that this recipe is extremely versatile so you can tweak the ingredients to suit your taste.
Gazpacho: Spain’s soup-and-salad hybrid, gazpacho is perfect when it is too hot to eat but you need a cold, salty lunch. While the original is tomato-based, we have also listed out two scrumptiously different variations to make things more interesting. Try the Watermelon Gazpacho or the Chilled Cucumber Gazpacho to mix things up a bit.
Avocado Cucumber Cold Soup: Creamy Avocado, cooling cucumber, sharp mint and ginger and cold yogurt come together in this delicious low calorie medley. Legend has it that the recipe of this lovely soup however came up without much plan, only because a lonely avocado needed to be eaten.
Cantaloupe Soup: When soups are as colourful as this Cantaloupe Fruit Soup, you can play up their vibrant hues in sparkling-white bowls. Let fresh seasonal produce inspire your menu — the choices are many, you can play around with the fruit- use strawberries, plums or black grapes.
Strawberry Mint Cold Soup: Traditionally made in Sweden in June when the wild strawberries are in season, the citrus orange base of the soup gives a lift to the flavour of the strawberries. This soup is great as a part of a multi-course meal and simply need a palate cleanser in between or a light dessert to finish off.
