Ingredients to make Vellai Kurma or White Kurma

  • 2 cups mixed vegetables, carrots, cauliflower, potato, beans, peas
  • 2 tsp oil
  • To Grind: 1 tsp phoola chana dal, 2 tsp coconut, 4 cashews, 2 green chillies,1 tsp saunf, 1 inch cinnamon, 2 cloves,1 green cardamom
  • 1 medium onion chopped
  • 1 tsp shredded ginger
  • 2 cloves garlic
  • 1/2 tsp mustard and 1/2 tsp jeera
  • 1/4 tsp Turmeric
  • Salt
  • Coriander and curry leaves

How to make Vellai Kurma or White Kurma

  1. Take a cooker add oil, add mustard seeds, jeera and curry leaves.
  2. Add onions, ginger and garlic, fry till pink, add vegetables, turmeric, salt and fry for a while. Add water and close the cooker and cook till one whistle.
  3. After opening the cooker again, add the ground masala and cook for 2 minutes.
  4. Garnish with coriander leaves.
  5. Serve with dosa, poori and chapati.
