Lemon Poppyseed Cake with Cream Cheese Frosting

Ingredients to make Lemon Poppyseed Cake with Cream Cheese Frosting

  • 1 cup self raising flour
  • 1/2 Cup Plain Flour
  • 1/2 cup almond meal (powder)
  • 125g softened butter
  • 3/4 cup superfine sugar
  • 3 eggs
  • 1 tbsp orange zest
  • 2 tsp lemon zest
  • 1/4 cup orange juice
  • 1/2 cup Greek/thick yogurt or sour cream
  • 1/4 cup Milk
  • 1/4 cup black poppy seeds
  • 250g softened cream cheese
  • 80g icing/powdered sugar
  • 2 tsp Lemon juice

How to make Lemon Poppyseed Cake with Cream Cheese Frosting

  1. Preheat oven to 320 Deg F (160deg C). Grease and dust a cake pan and line it up oven proof parchment paper.
  2. Soak poppy seeds in milk for 15 minutes.
  3. Beat butter, sugar and lemon zest till light and creamy.
  4. Add eggs one at a time beating well after each addition.
  5. Add yogurt, milk, orange zest, and orange juice to the wet ingredients and whisk.
  6. Combine all the flours and almond meal. Mix well.
  7. Add dry flours to the wet ingredients in three batches till just combined.
  8. Pour batter in prepared cake pan. Smoothen the top, tap the pan on kitchen counter and bake in oven for 30-40 minutes or till toothpick when inserted in the centre of cake comes out clean.
  9. Remove from oven and cool for 5 minutes. Transfer to wire rack to cool completely.
  10. Cream Cheese Frosting- Beat softened cream cheese, icing sugar, and lemon juice. Whisk to combine well.

My Tip:

Muffins can also be made from this batter. Baking time varys according to individual oven temperatures. Sugar can be up to 1 cup for extra sweetness. Feel free to use an electric handheld mixer for creaming or frosting.
