Ingredients to make Puttu

  • 2 cups of Puttu flour
  • 1/2 cup of Lukewarm water
  • 1/2 cup of coconut grated
  • 1/2 tsp of salt

How to make Puttu

  1. Mix puttu flour and salt together in a bowl. Add water a little at a time and mix well with your fingertips.
  2. Check for a crumbly, moist flour consistency. When pressed between your fist, it should hold its shape but crumble easily when pressed harder
  3. Use a puttu maker for best result. Add about 1-2 tbsp greated coconut to the bottom of the mould.
  4. Add the puttu flour until the mould is filled halfway.
  5. Add another layer of coconut and the rest with the flour.Steam for 8-10 mins
  6. When cooked, using the end of a spatula,unmould by pressing through the mould gently.
  7. Let it cool and then serve with curry.

For making puttu flour we have to wash and soak Raw Rice for around 2-3 hours. Wash again and drain the water completely using a colander. Spread the soaked raw rice on a cloth for 45 minutes. Then ground it in a flour mill when it is slightly wet. Then roast the flour on medium heat until you get a puttu like aroma of roasted flour. Spread it to cool and then store this puttu podi /puttu flour in an airtight container.
