Khichdi

Ingredients to make Khichdi

  • 2 tablespoons vegetable oil
  • 1 large onion, finely chopped
  • 2 green chillies, finely chopped
  • 1/2 teaspoon ginger paste
  • 1 and ½ teaspoons garlic paste
  • 1 carrot, peeled & finely diced
  • 1/4 cup broccoli florets
  • 5-7 French beans, strung & diced
  • 1 small red capsicum, finely diced
  • 1 small yellow capsicum, finely diced
  • 1 small green capsicum, finely diced
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon coriander powder
  • 2 cups Arborio rice
  • 4 cups vegetable stock, hot
  • salt to taste
  • 1 tablespoon clarified butter (ghee)
  • 4 cloves garlic, finely chopped
  • 2 dried red chillies, broken into pieces

How to make Khichdi

  1. Heat oil in a large heavy pan over medium heat and add onion and chillies. Sauté till the onion turns translucent.
  2. Add ginger and garlic pastes, and vegetables and sauté till the vegetables are slightly tender.
  3. Add turmeric, coriander powder and Arborio, and sauté for 3 to 4 minutes. Keep stirring in small batches of stock at regular intervals till the rice is cooked through and creamy.
  4. Add salt and remove from flame.
  5. Heat the clarified butter in a small pan over medium heat and add garlic and red chillies. When the spices crackle, pour clarified butter over the prepared khichdi.
  6. Serve hot with any raita of your choice.
