ABOUT Tricolour Sweets Medley Shots RECIPE

Celebrating India's 70th Independence Day, I made this special tricolour sweets medley shots which represents Indian Flag. This tricolour sweets medley shots consists of green peas phirni, layered by oats coconut water pudding and finally toppped by vermicelli halwa or also known as meethi sewai ka halwa. This dessert is a flavorbomb,easy and quick. The thick, creamy texture is irresistable and make a perfect dessert for any special occasion.

Ingredients Serving: 4

  1. For green peas phirni :
  2. 1/2 cup full fat milk
  3. 1.5 tbsp sweet condensed milk
  4. 1/4 cup blanched green peas
  5. 2 tbsp rice soaked for atleast 30 minutes
  6. 3 green cardamon pods
  7. 1/4 tsp Fennel seeds
  8. 1/8 tsp nutmeg
  9. 1 tbsp walnuts
  10. 1-2 drops of kewra essence
  11. 1/4 tsp edible green food color
  12. For Oats Coconut Water pudding:
  13. 1/2 cup coconut water
  14. 1 cup full fat milk
  15. 3 tbsp sweet condensed milk
  16. 4 tbsp whole grain rolled oats
  17. 1 tbsp ghee
  18. 1 tbsp thinly sliced cashews or chopped almonds
  19. For Vermicelli halwa or meethi sewai ka halwa :
  20. 1/2 cup vermicelli
  21. 1 tbsp ghee
  22. 6 tbsp sugar
  23. 1.5 cups water
  24. 1 tbsp chopped cashews/almonds
  25. 1/4 tsp Cardamom Powder
  26. 1-2 drops of saffron flavor essence
  27. 1/4 tsp edible egg yellow color

Instructions

  1. Step 1 : Prepare the green peas phirni
  2. Grind the green peas with 3 tbsp of water in a mixer. Drain the soaked rice and then add it into the mixer. Add the cardamon pods, fennel, nutmeg, kewra essence, walnuts and grind all the ingredients together into a smooth puree.
  3. Heat milk in a pan and bring it to a boil. Add the condensed milk, green food color, green peas puree and simmer the mixture till it thickens to the consistency of a pudding.
  4. Remember that phirni thickens more on cooling. So remove the pudding from the heat accordingly. Transfer it to a bowl and cool it in a refrigerator.
  5. Step 2 : Prepare the Oats Coconut Water Pudding
  6. Heat 1 tbsp ghee in a pan and saute the oats for 2-3 minutes till it turns light brown. Keep it aside.
  7. Add milk into saucepan and bring it to a boil. Add the sweet condensed milk and rolled oats. Simmer the mixture till it begins to thicken. Add the coconut water and let it simmer for 3-4 minutes more on medium heat till the mixture thickens to the consistency of a pudding
  8. Transfer the oats coconut water pudding into a bowl and let it cool in a refrigerator.
  9. Step 3 :Prepare vermicelli halwa
  10. Heat a pan and add ghee to it. Add vermicelli into the pan and saute it on low medium heat till it turns light brown. Remove the roasted vermicelli from the pan.
  11. Add 1.5 cups of water and bring it to a boil on medium heat. Add the vermicelli into the hot water and let it cook till it becomes soft. Add sugar, chopped cashews, raisins and food color. Cook till the sugar dissolves.
  12. Add cardamom powder and saffron flavor essence into the halwa. Stir and mix. Turn off the heat. Keep it aside.
  13. Step 4 : Assemble the tricolour sweet medley in shots glasses
  14. Pour a portion of peas phirni in individual shot glasses.Layer it with a portion of oats coconut water pudding and sprinkle some almonds or cashews over it. Finally top each glass with a portion of vermicelli halwa.
  15. Serve it immediately or refrigerate it until ready to serve.
