ABOUT Govind gotte RECIPE

Govind gotte is a traditional recipe of Rajasthan. This is somewhat rich in taste than the plain gotte ki sabji as there is a stuffing of mawa and fried dry fruits in the gotta. This is a royal cuisine of Rajasthan and also made in any festive and parties. These are made out of gram flour with stuffings and the gravy is totally made out of ghee and curd. This is so rich in taste.

Ingredients Serving: 5

  1. For making dough:
  2. 1 1/4 cup gram flour
  3. 3 tsp Ghee
  4. 3 tsp curd
  5. 1/4 tsp turmeric powder
  6. 1/2 tsp chilli powder
  7. 1 tsp kasoori methi
  8. 1/4 tsp Salt
  9. A pinch of baking powder
  10. For stuffing:
  11. 1/2 cup crumbled mawa
  12. 1/3 cup fried and splitted cashew nuts and raisins
  13. A pinch of salt
  14. 2-3 pinch of chilli powder
  15. A pinch of black pepper powder
  16. For boiling the govind gotte:
  17. 2 cup water
  18. A pinch of salt
  19. 1-2 tsp ghee
  20. 2 tsp curd
  21. For frying the gotte:
  22. Oil for dip frying
  23. For the gravy:
  24. 2-3 tsp ghee
  25. 2 pinch of hing
  26. 1/4 tsp carom seeds
  27. 1/2 tsp cumin seeds
  28. 1/2 tsp fennel seeds
  29. 2 red chilli
  30. 1 tsp Ginger garlic paste
  31. 1.5 tsp gram flour
  32. 1/2 cup curd
  33. 1/4 cup fresh tomato puree
  34. 1 tsp Chilli Powder
  35. 1/2 tsp turmeric powder
  36. 1/2 tsp coriander powder
  37. 1/2 tsp Cumin powder
  38. salt as per taste
  39. The boiled water in which govind gottes are boiled
  40. 1 tsp kasoori methi
  41. 2-3 tsp chopped coriander leaves

Instructions

  1. Mix all the ingredients for the dough.
  2. Then make dough by kneading it for 5-7 minutes.
  3. Mix all the ingredients for the stuffings.
  4. Make equal portions of the dough and make a bowl like shape of them and then stuffed them with the mawa and fried dry fruits stuffing.
  5. Follow the same process for all the portions and make small lemon size balls.
  6. Heat water in s bowl and add ghee, curd and salt in it and then put the prepared balls in it and allow them to boil for 10 minutes in medium flame.
  7. Then heat oil in a kadai dip fry the boiled gottes till golden brown in low to medium flame.
  8. Then heat s pan and add ghee in it and then add hing, carom seeds, cumin seeds, fennel seeds, red chilli in it.
  9. When a nice aroma comes from it , then add ginger garlic paste with 2 tsp of water in it.
  10. When the smell of garlic has gone then add the gram flour in it and saute it till a nice aroma comes from.
  11. Then add beaten curd in it and stir it continuously otherwise the curd must be curdle.
  12. Then add the fresh tomato puree in it and mix it well.
  13. Then add all the power spices along with salt in it and mix it well.
  14. Then add the boiled water ( from the boiling gottes) and kasoori methi in it.
  15. Add the fried gottes in it and mix them well.
  16. Allow them to boil for sometime in low flame for 8-10 minutes and mix the the chopped coriander leaves in it.
  17. Now your Govind gotte is ready to serve. Serve hot with roti.
