Lamb Rendang (Indonesian)

Ingredients to make Lamb Rendang (Indonesian)

  • 1/2 kg lamb, chopped into pieces
  • salt to taste
  • 2 tbsp desiccated coconut
  • 3-4 inch ginger
  • 3 inch galangal
  • 3-4 garlic cloves
  • 100 gm onion
  • 1 tsp turmeric powder
  • 5-6 whole dried red chillies
  • 1 stalk lemongrass
  • 1 tbsp tamarind paste
  • 1- 1/2 cups coconut milk
  • 3-4 cloves
  • 2-3 green cardamoms
  • 1 star anise
  • 10-12 peppercorns
  • 2 tbsp oil
  • water as required

How to make Lamb Rendang (Indonesian)

  1. First of all soak the dried red chillies in boiling water for a few minutes. Then keep it aside. Also roast the desiccated coconut and keep it aside.
  2. Heat oil in a wok, then place the lamb pieces into it and let it change colour till it is slightly brown.
  3. Meanwhile roast all the whole spices and grind them to a powder form. Next, take the onion, ginger, galangal, garlic, lemon grass, turmeric and process them together to form a fine paste.
  4. Now add this paste and coconut milk to the lamb in a wok and let it cook on a low flame for about 30 minutes while stirring in between.
  5. After 30 mins, add in the grounded whole spices to it and stir well. Allow it to cook till the lamb gets tender.
  6. Once almost all the water is evaporated, add in the tamarind paste and roasted desiccated coconut.
  7. Your delicious dish is ready once all the water has dried up.
  8. Serve it hot with plain white rice and enjoy the world's tastiest dish.

My Tip:

You can add water if you want the dish with a little gravy. If you don't find galangal, use a little more ginger. If you don't find lemon grass and tamarind paste, you can substitute it with the zest of 1 lemon.
