Chinese Toffee Banana

Ingredients to make Chinese Toffee Banana

  • Bananas 4, (large, ripe and firm)
  • Black sesame seeds 1 tablespoon, toasted
  • White sesame seeds 1 tablespoon, toasted
  • Vegetable oil for deep frying
  • For the batter:
  • All purpose flour 3 tablespoons
  • Corn flour 3 tablespoons
  • Baking powder 1/2 teaspoon
  • Vegetable oil 2 teaspoons
  • Cold water as needed
  • For the caramel:
  • Granulated sugar 1 cup
  • Water 4 tablespoons
  • Ice cold water (to quickly chill the toffees)
  • To serve:
  • Vanilla ice cream (optional)

How to make Chinese Toffee Banana

  1. To start with, heat the vegetable oil in a wok for deep frying. Also cut the bananas diagonally into thick slices.
  2. To make the batter, in a mixing bowl add in the flours, baking powder and vegetable oil. Add cold water as required to make a thick batter.
  3. Using a bamboo skewer, dip each banana slice in the batter, coat it all over and deep fry all these pieces in batches until they are golden and crisp. Then drain on paper towels and keep them aside.
  4. To prepare the caramel, place the sugar and water in a medium, heavy-based saucepan. Cook on a low heat till the sugar caramelizes. Do not stir it. You can turn the pan to adjust the temperature.
  5. Cook the sugar till it becomes a light caramel. Heat for some more time if you desire a darker caramel, taking care not to char the sugar. Remove from the heat and work very quickly through the rest of the steps.
  6. Drop one banana fritter at a time into the hot caramel, coat it all over with a fork or spoon, then remove it immediately and drop them into a bowl of iced water so that the caramel hardens immediately.
  7. Take them out immediately and drain on a wire rack, then sprinkle black and white sesame seeds on top.
  8. Serve Toffee Banana as it is or with ice cream for a wholesome dessert.

My Tip:

1. You can also use other fruits such as apple or pineapple for an added twist.
