Soy Bean Pudding

Ingredients to make Soy Bean Pudding

  • Soy milk - 2 cups
  • Agar agar flakes - 2 tbsp, chopped finely
  • Vanilla essence - 1/4 tsp
  • water - 1/2 cup
  • For the Syrup:
  • sugar - 1/4 cup
  • water - 90 ml
  • ginger - 1/2 inch piece

How to make Soy Bean Pudding

  1. Soak the agar agar in 1/2 cup of water. Leave it aside for 30 mins.
  2. After this, heat the soy milk in a pan on a low heat. When it is hot and has a slight boil, strain and add the agar agar.
  3. Stir and keep cooking in a low flame till the agar agar looks like it's absorbed. All of it may not dissolve. Cook it for a minimum of 15-20 minutes.
  4. Let it cool slightly then strain and pour in a pudding bowl. Refrigerate when it reaches room temperature.
  5. For the syrup, take all the ingredients in a pan and let it boil till sugar has dissolved and is a little thick.
  6. Remove from heat, take out the ginger and let it cool.
  7. To serve, cut thin slices of the pudding with a metal spatula and take it in a bowl.
  8. Pour the syrup over the pudding and serve.
