Curry Leaf Rice

Ingredients to make Curry Leaf Rice

  • 1cup rice
  • Water 2 cup
  • Salt according to taste
  • For curry powder-
  • Curry leaves - 1 cup
  • Channa Dal - 2 tbsp
  • Toor dal - 2 tbsp
  • Coriander seeds- 1tbsp
  • Black Pepper - 1 tsp
  • Red Chili - 3
  • Oil - 1 tsp
  • Salt to taste
  • For tempering -
  • Oil/ghee 2tbsp
  • Mustard seeds 1tsp
  • Cinnamon stick
  • Some peanuts/cashews
  • Red and green chilies

How to make Curry Leaf Rice

  1. In a pressure cooker Add rice and water.
  2. Cook on medium flame only for 1 whistle. Let it cool
  3. In a pan add oil and dry roast all ingredients mention in curry powder .
  4. Add curry leaves and saute it for 3 to 4 minutes
  5. Cool it and grind it to a coarse powder.
  6. In another pan heat oil on medium flame.
  7. Add mustard seeds.
  8. Add small cinnamon stick When it starts crackling, add roasted peanut/cashew.
  9. At last mix curry powder and tempering with rice.
  10. Add red chilli and green chilli
