Ingredients to make Shalgam Gobhi Gajar Ka Achar(Seasonal Turnip, cauliflower, carrot pickle)

  • cauliflower-1/2 kg
  • Turnips-1/2 kg
  • carrots-1/2 kg
  • mustard powder-2 tbsp
  • vinegar-1/2 cup
  • jaggery/gur/Sugar-250 gms
  • mustard oil-1cup
  • Coarsely ground ginger paste-3 large tbsp
  • Coarsely ground garlic paste-3 large tbsp
  • Salt and red chilli powder to taste
  • Whole red chillies- 4

How to make Shalgam Gobhi Gajar Ka Achar(Seasonal Turnip, cauliflower, carrot pickle)

  1. Wash and peel carrots, turnips and cauliflower, Cut carrots and turnips into longish pieces, separate cauliflower into florets.
  2. Dry in the sun for 2 days, or if the weather is cloudy, drain on paper towels and dry indoors for 2 days.
  3. Alternatively, boil a large pan of water, add the vegetables and let cook for 3 minutes, drain and then dry completely in the sun.
  4. Heat mustard oil in a heavy kadhai till smoking, let cool a bit.
  5. Fry ginger and garlic till golden, add vinegar, red chillies and jaggery .Add the vegetables and cook for 5 minutes,add salt and red chilli powder, toss well, cool and bottle into clean and dry bottles.
  6. Keep in the sun for 2-3 days and your pickle is ready!Keep stored in the refrigerator, it will last several months.

My Tip:

The vegetables should be dried thoroughly before pickling. The spoons you use should be clean and dry and the bottles as well. Moisture can make the pickle spoil very soon.
