Ingredients to make Cranberry And White Chocolate Biscotti

  • 100 GM's dried cranberries
  • 300 gm white chocolate
  • 25 gm butter
  • 225gm self raising flour
  • 50gm brown sugar
  • 50gm walnuts
  • 1tea spoon vanilla essence
  • 2 eggs

How to make Cranberry And White Chocolate Biscotti

  1. chop 100 gm of chocolate into small pieces and set aside. break up the remainder and melt it in a small bowl with the butter. leave to cool. sift the flour into a mixing bowl and stir in the sugar, eggs, essence, cranberry, nuts and melted chocolate.
  2. add the reserved pieces of chocolate and mix to a dough. tip onto a lightly floured surface and halve.
  3. shape each half into a log about 28cm long and 2cm high. space well apart into a lightly oiled baking sheets and bake in a preheated oven,180 C for 25 minutes until risen , golden and firm. remove from the oven and reduce the temperature to 160 C
  4. cool the log for 20 minutes , then cut into 2cm slices .bake for further 15 minutes. dust with icing sugar and transfer to wire rack to cool. Serve with a cup of coffee.
