Rice Khichu

Ingredients to make Rice Khichu

  • ½ cup rice flour/chawal ka atta
  • ½ teaspoon cumin seeds/jeera
  • 1 Green chilli, finely chopped
  • salt to taste
  • 1 ¼ cups water
  • For garnishing
  • 1-2 teaspoon peanut oil
  • ½ teaspoon achaar masala/red chilli powder
  • small bunch of coriander leaves, finely chopped

How to make Rice Khichu

  1. Firstly, add water into a steamer and heat it, as we have to steam cook the khichu.
  2. Meanwhile, heat water in a deep pan.
  3. Add cumin seeds, green chili and salt into water and let it simmer.
  4. Once the water starts boiling, gradually add the rice flour. You will notice that the mixture will begin to thicken.
  5. Mix it with the help of a wooden spatula. Make sure there are no lumps in the mixture.
  6. Stir continuously while the rice flour combines with water and form into a dough like consistency. Let it cook for about a minute. Turn off the flame.
  7. Place the khichu dough in a steamer plate/container for steaming.
  8. Steam cook for 7-8 minutes. Remove from flame.
  9. Serve khichu hot, topped with peanut oil, finely chopped coriander leaves and red chilli powder.

My Tip:

The traditional way of eating khichu is with raw peanut oil and achaar masala. As no oil is added while making khichu, it is topped with a little bit oil. But it’s completely fine if you don’t have peanut oil. You can use any kind of oil or skip topping it up with oil.
