ABOUT Cucumber Noodles Salad RECIPE

The salad is sweet, sour and has noodles. Yes you read it right, Cucumber noodles tossed in a yummy homemade sweet and sour dressing. It's a refreshing salad for the hot summer days.

Ingredients Serving: 3

  1. 2 medium cucumbers
  2. 1/2 cup chopped red onion
  3. 1/2 tsp sugar
  4. 1/2 tsp red chilli flakes
  5. 1 tbsp lemon juice
  6. 1/2 tsp white sesame seeds
  7. Few thin julien's of raw mango
  8. Few Shredded reb cabbage
  9. Few mint leaves

Instructions

  1. Attach the julienne blade to the mandolin and adjust it to the 1/8-inch-thick setting
  2. Applying medium pressure, carefully run one of the cucumbers down the blade to form noodles, slicing until you reach the core.
  3. Rotate the cucumber a quarter turn and continue slicing and rotating until you've cut the entire cucumber. 
  4. In a large bowl add chopped red onion, sugar, red chilli flakes, thin julienne of raw mango and cucumber noodles.
  5. Cover the bowl with plastic wrap and refrigerate the cucumber noodles for 30 mins.
  6. When ready to serve add lemon juice and sesame seeds from top mix it well garnish with shredded red cabbage and mint leaves.
  7. Serve chilled and enjoy hot summers with this refreshing salad.
