Crispy Lentil Fingers

Ingredients to make Crispy Lentil Fingers

  • 1/2 cup green-gram ,washed& soaked for 2 hours
  • 2 tsp ginger chopped
  • 2 tsp green chillies chopped
  • 1.1/2 cups water for grinding
  • 2 tbsp vegetable oil
  • 1&1/2tsp cumin (jeera) seeds
  • 1/2tsp salt
  • 2tbsp coriander leaves, chopped.
  • Vegetable oil for deep- frying

How to make Crispy Lentil Fingers

  1. Drain the green-gram and grind to a smooth paste with ginger green chillies and water.
  2. Heat 2 tablespoons oil in a non-stick pan for a minute; add cumin seeds and turn off the heat, when the seeds turn brown. Add the lentil paste, salt, and coriander leaves mix well.
  3. Turn on the heat and cook the mixture, stirring constantly, till it leaves the sides of the pan.
  4. Pour the mixture, evenly, into a greased 8" square dish and cool it completely. Cut into rectangle fingers 11/2" x1/2
  5. Heat 1" deep oil in a shallow pan, deep fry the fingers in medium-hot oil till light golden brown. Serve hot.

My Tip:

The lentil mixture can be set ahead of time, refrigerated and fried when required.
