Ingredients to make South Indian Kalathu Podi (Kulthi Dal Powder)

  • 1/2 Cup - Kulthi / Kollu / Horse Gram Dal
  • 1/2 Cup - Tur / Arhar Dal
  • 1/2 Cup - Yellow Mung Dal
  • 2 tsp - Asafoetida powder
  • 2 tbsp - Salt (approx)
  • 3 - Dried red chilies

How to make South Indian Kalathu Podi (Kulthi Dal Powder)

  1. Pick the Kulthi Dal ensuring there are no small stones. Do the same for the other dals as well.
  2. Roast the Kulthi Dal in a non stick pan (without oil) on medium heat till it turns crisp and deep red and emits its unique aroma. Take it out in a plate and then roast the other two dals as well till they turn reddish pink. Keep aside to cool.
  3. Powder all the dals one by one in a grinder to a coarse consistency. Now combine all the powdered dals.
  4. Add the roasted chilies, salt and powder again. Taste for salt here and if needed add more. Add the asafoetida. Grind one final time.
  5. Fill this delicious powder in airtight plastic or glass containers and use as required.
My Tip: 1.Always keep the container tightly closed and airtight.Otherwise the lovely aroma and taste of the powder will dissipate and the powder will form lumps. 2.This is also a good accompaniment to Idlis and Dosas.
