ABOUT Millet And Spinach Khichdi RECIPE

Millets are tiny cereals, which are low in Carbohydrates and very good source of Protein, fiber and Vitamins. This is a very tasty, easy to make, healthy one pot light meal.

Ingredients Serving: 2

  1. Saame rice / Foxtail millet – 1 Cup (you can use normal rice as well)
  2. Moong / green gram dhal – ½ cup
  3. Spinach – 1 bunch
  4. Cumin seeds – 1 teaspoon
  5. Hing/ Asafoetida – ½ teaspoon
  6. Ginger – 1” piece
  7. Green chillies – 1 to 2 (slit)
  8. Salt- to taste
  9. Ghee – 1 to 2 table spoon
  10. Water – 4 to 6 Cups

Instructions

  1. Wash moong dal, millet and rice, keep aside.
  2. Wash and grind spinach into puree.
  3. Heat ½ table spoon of ghee in a pressure cooker. Add Cumin seeds, hing, green chilies and ginger and fry for a minute.
  4. Now add spinach puree, 4 cups of water, salt and bring to boil. When it starts boiling, add dal and millet rice mixture. Check for salt and cook till 3 to 4 whistles.
  5. After the pressure releases, open the lid and pour in the remaining amount of ghee.
  6. Enjoy with any crispy side dishes or raita.
