Ingredients to make Swiss roll with apricot preserve

  • 4 eggs
  • 3/4 cup granulated sugar
  • 3/4 cup plain flour
  • Fruit preserve of choice- as required
  • a little icing sugar for dusting
  • Vanilla extract- 1 tsp

How to make Swiss roll with apricot preserve

  1. Make sure all the ingredients are at room temp. Preheat oven at 180 deg C.Grease and line a jelly roll pan.
  2. Separate the yolks from the whites.
  3. Transfer whites to a very clean and dry bowl.
  4. Start whipping the whites till stiff peaks appear, now add in sugar and yolks alternately till thick. The mixture should fall down in thick yellow ribbons.
  5. Sieve the flour and gently fold into the whipped egg mixture, with a large metal spoon, using a very light hand.
  6. Pour into prepared jelly roll pan, bake for 10 minutes or till golden on top.
  7. Meanwhile keep a clean tea towel ready, transfer prepared cake onto the tea towel and roll up.Let cool.
  8. Unroll and spread the apricot preserve, roll up again and dust some icing sugar on top. Serve with coffee.

My Tip:

You can layer the inside with fresh cream, chopped fruit of your choice. You can even cover it up with whipped cream/ganache.
