ABOUT Badusha RECIPE

A delicious south indian sweet, crispy dumplings in sugar syrup

Ingredients Serving: 6

  1. All purpose flour - 1.5 cups
  2. Sugar - 1/2 teaspoon
  3. Curd - 1.5 teaspoon
  4. Ghee - 1/4 cup
  5. Oil - 1/8 cup
  6. Cooking soda - 2 pinches
  7. Oil (for frying)
  8. For sugar syrup :
  9. Sugar - 1 cup
  10. Water - 1/2 cup
  11. Cardamom - 2
  12. Lemon juice - 1/2 teaspoom

Instructions

  1. Add 1/4 th cup ghee in a bowl.
  2. Add 1/8 th cup oil to the ghee.
  3. Add 1/2 tsp sugar to the mix.
  4. Add 1.5 teaspoon curd as well.
  5. Now add 2 pinches of cooking soda.
  6. Mix it well and whisk till it is pasty.
  7. Add the flour to it.
  8. Add 1/4 th cup of water and knead a soft dough.
  9. Rest the dough for 10 minutes
  10. Make a sugar syrup of one string consistency with 1 cup sugar and 1/2 cup water.
  11. Add 2 crushed cardamom pods.
  12. Add 1/2 teaspoon lemon juice to the syrup. Switch off the flame.
  13. Divide the dough into 13 lemon sized balls. Take each ball and pinch the edge bringing it inside to form the badusha.
  14. Deep fry the badushas in ample amount of oil in medium to low heat
  15. Strain the fried badushas and dip them in sugar syrup
