Ingredients to make Vege Appey

  • For batter:
  • 2 cup semolina
  • 1 cup curd
  • 1 tbsp salt
  • 1 cup water
  • 1 tsp fine chopped coriander
  • For filling:
  • 1 cup very fine chopped vegetables( capsicum,cabbage,onion, tomato without seed)
  • 1 tsp fine chopped gteen chilli
  • 1 tsp salt
  • 1/4 tsp red chilli powder
  • oil for greasing

How to make Vege Appey

  1. Mix well all batter ingredients and left for 30 mins or more
  2. Now add eno and mix it well and grease the appey pan .
  3. Mix all ingredients of filling. Fill 1-1 tsp batter in appey mold then fill 1-1 tsp filling.
  4. Press the filling and again add 2-2 tsp batter add on filling.
  5. Now cover the pan for a couple of minutes until under sides is cooked and golden brown in colour. Flip over. Cook other side for min.
  6. Once both sides are cooked and crispy remove the appey from the mold .
  7. Serve appey hot or warm with fresh coconut chutney/coriander minty dip or samber.
My Tip: for pink appey add 1/2 cup beetroot juice.
