Burghul Minestrone Soup with Pine Nuts

Ingredients to make Burghul Minestrone Soup with Pine Nuts

  • FOR STOCK
  • bottle gourd 100 gram peeled and chopped
  • spinach leaves 1/4 cup
  • tomato 1 small chopped
  • FOR MINESTRONE
  • Burghul 1/8 cup
  • garlic 4 cloves slivered
  • onion chopped 1/4 cup
  • Short green beans cut 1/2 cup
  • Fresh Green peas 1/2 cup
  • carrot small cubes 1/4 cup
  • Green capsicum chopped 1/4 cup
  • Spring onions chopped 2 teaspoons
  • potato 1 small chopped
  • salt to taste
  • Black pepper to taste
  • 1 tsp oregano
  • Zest of one lime
  • 2 tbsp Crushed pine nuts for topping
  • 2 tsp olive oil

How to make Burghul Minestrone Soup with Pine Nuts

  1. For the stock, Cook bottle gourd, spinach and tomato in a pan with 4 cups of water .
  2. Mash and strain for stock and keep it aside.
  3. FOR MINESTRONE
  4. Heat olive oil in a pan, saute garlic until aromatic
  5. Add the chopped onions and saute for a minute
  6. Add and saute burghul for a minute
  7. Now add carrot, potato, beans and peas. Saute them for a minute.
  8. Add capsicum and spring onions with the stock and mix well
  9. Add oregano , zest and salt. Simmer the soup over medium heat for 10 minutes
  10. Add pepper and check for seasoning
  11. Garnish with Pine nuts and serve warm
