Burghul Minestrone Soup with Pine Nuts

Ingredients to make Burghul Minestrone Soup with Pine Nuts

  • FOR STOCK
  • bottle gourd 100 gram peeled and chopped
  • spinach a few leaves
  • tomato 1 small chopped
  • FOR MINESTRONE
  • Burghul 1/8 cup
  • garlic 4 cloves cut into slivers
  • onion chopped 1/4 cup
  • Short green beans cut 1/2 cup
  • Fresh Green peas 1/2 cup
  • carrot small cubes 1/4 cup
  • Green capsicum chopped 1/4 cup
  • Spring onions chopped 2 teaspoons
  • potato 1 small chopped
  • salt to taste
  • Black pepper
  • dried oregano
  • Zest of one lime
  • Crushed pine nuts for topping

How to make Burghul Minestrone Soup with Pine Nuts

  1. For the stock, add bottle gourd, spinach and tomato in a pan with 4 cups of water .
  2. Boil till vegetables are cooked nicely.
  3. Mash and strain for stock and keep aside.
  4. FOR MINESTRONE
  5. Take olive oil and saute garlic till pale yellow
  6. Add the chopped onions and saute for a minute
  7. Then add and saute burghul nicely for a minute
  8. Now add carrot, potato, beans and peas. Saute them for a minute.
  9. Then add capsicum and spring onions
  10. Add the prepared stock.
  11. Add oregano , zest and salt
  12. Simmer the soup over gentle heat for 10 minutes
  13. Adjust for salt and sprinkle black pepper powder.
  14. Ladle the minestrone into serving bowls.
  15. Top with crushed pine nuts
